Ingredients
3 cups all purpose flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
3 tsp ground cinnamon
3 eggs
1 C vegetable oil
2 1/4 C white sugar
3 tsp vanilla extract
2 C grated zucchini, DO NOT DRAIN OR PAT DRY
**I peeled my zucchini before grating it**
1 C chopped walnuts, optional
Directions
**Pre-heat oven to 325 F**
1-Grease 2 bread loaf pans
2-Combine flour, salt, baking soda, baking powder, and cinnamon in a small bowl.
3-Beat eggs, oil, sugar, and vanilla until well mixed. Add flour mixture to egg mixture and blend until well mixed. It will be thick. Add zucchini and walnuts and mix until well blended.
4- Distribute evenly between two greased bread pans. Bake at 325 for 50-60 minutes. Check darkness to make sure it doesn't get too brown on top. Loosely cover with aluminum foil to prevent over-browning.
5-Let cool before cutting.

Ok, this has nothing to do with your yummy looking bread, but I wanted to comment on your prior post about Syd and her camp. I wasn't sure if you would check the comments on that one again, so I posted here. Anyways, it looks like she had so much fun. I am glad that she was able to be in a place where she felt like she was the same as all the other kids. What a great opportunity for kids to be able to associate with other kids dealing with the same thing. Keep us posted on how she is doing.
On another side note. How is your training going? I am not working there anymore. Some prior health problems kicked in again and I had to quit. Keep me posted on your progress. Talk to you soon.
IF i could get in the kitchen to cook....I would be cooking this because I have a giant zuccinni sitting on my counter and no idea what to do with it! :)
