Have You Used This?

I was shopping at Costco today and ran across this nifty product. It wasn't even pricy. I got 2, 23 ounce bottles for just under $7.50. I have heard of other diabetics using it before and was just curious what your thoughts are if you have used it. What this is is a natural sweetener that is low on the glycemic index so it doesn't spike blood sugar levels. I think it will be great for syd--and all of us. You can use it in place of regular sugar but it is naturally more sweet so you use less of it. It is organic and wholesome! I'm excited to try it. Any suggestions on what to use it in? I am making peanut butter cookies for syd's birthday snacks at school on Friday. (Yes she will be 6 on Friday!) Would this be a good substitute for the sugar or no? Thanks for any thoughts or suggestions!

Oh and one other perk...it is gluten free! My bottle doesn't say "Raw" on it but I'm pretty sure it's the same thing.

I don't know about the cookies, but I have used it in a pancake recipe I have in place of the sugar (you can also use it instead of syrup). I've also used it to make apple butter, and when I made tomato soup the other day.

The rule of thumb I've seen is to use 2/3 to 3/4 of the amount of sugar you would be using (so if the recipe calls for 1 cup, use 2/3 to 3/4 of a cup of agave nectar - I hope I explained that clearly). You also should decrease the amount of liquid by 25%. I've never had to do that in any of the recipes I've made, but I haven't baked with it yet so I'm not sure how it works with that.

In any case, let us know how the cookies turn out!

I've heard good things about that stuff :) I tasted it once -- REALLY SWEET!!!!! I don't think you're suppose to use as much of it as you would sugar.

We use Agave ALL the time for our baked goods. I have a wonderful book called Baking With Agave Nectar by Ania Catalano. I just made an Apple Pie from this book with Agave and it was yummy! I find that it spikes Addison much less quickly than reg sugar but it still causes a spike. Even though it has a more distinct flavor, I find that Maple Syrup is actually less spikey for Addison than Agave. I haven't tried converting any recipes but what Joanne said sounds right. That is awesome that Costco has agave!

Shamae, I use this all the time! It's really really tasty. I use it in place of syrup, sugar, everything. I make cookies with it, muffins, etc. It's really great! Have you ever heard of vanilla stevia? It's another natural sweetner, super yum.
